Tonight for dinner I was craving this soup! My mom has been making it forever! It is so comforting and reminds me of her when I make it. It goes perfect with some homeade rolls or breadsticks, and I have always wanted to try it with breadbowls.
Cream of Broccoli Soup
1/4 cup butter
1 small onion, chopped
3 medium potatoes, peeled and cubed
2 heads broccoli, cut into pieces
2-3 Tbsp. flour
3 cups milk
1 1/2 -2 cups grated cheddar cheese
salt and pepper to taste.
Peel and cube 3 medium potatoes. Put in a medium saucepan and cover with water, just until the potatoes are covered; cook until tender. Cut up the broccoli and put in a medium saucepan and cover with water; cook until tender. Melt butter in large saucepan; add chopped onion, salt and pepper and cook until onion is tender, about 5-10 minutes. To the onion and butter add the flour. Stir and cook for about 3-5 minutes stirring constantly. Add 3 cups milk and stir until it thickens up a little. Mash the potatoes and the broccoli with a potato masher. Mash with the water that they cooked in. I drain some of the water off the broccoli so it won't make it to runny when you add it to the soup. Add both to the soup mixture. Add the cheese and stir until melted. Garnish with more cheese.
4-6 servings.
My mom always mashed the potatoes until they were all mashed, but we like it when some are mashed and some are still in cubes. Same goes with the broccoli. It just depends on how you like your soup. I also like to double the recipie becuase we love the leftovers!
